If you haven’t discovered these yet, pronounced poh-keh, they are hawaiian-japanese fusion dishes, similar to a sushi bowl, but with a Hawaiian twist featuring raw fish that is diced into large cubes. Simply translated, Poké means "to cut into pieces" in English and can be found everywhere in Hawaii.
